Manual and electric types of knife sharpeners - Ice advice

How to use the Apollo knife sharpener

The sharper the kitchen knives, the more convenient it is to work with them. In addition, a blunted edge of the device is much more dangerous than a sharpened one.

Like any tool, cutters require careful care and timely processing.

In our article we will look at which knife sharpener is better, how to decide on the choice of this gadget, and which manufacturers produce the best models of devices for sharpening blades.

Types of knife sharpeners

There are several types of sharpeners that work well on the blade, but differ in material and efficiency of use. Let's look at the popular types of sharpeners and find out what their advantages and disadvantages are.

Electric knife sharpeners

Previously, electric sharpeners were used exclusively in catering establishments or industries. Such devices were quite large in size, but sharpened the knife blade as quickly as possible. Over time, more compact versions of electrical gadgets began to appear, which became popular in home use.

Grinder

The sharpening machine is a stand with a motor, to which the flywheel itself is attached using a clamp. When connected to electricity, the sharpening disk begins to rotate at a given speed.

It is enough to carefully apply the tip of the knife to the sharpener and in a matter of seconds the tool will acquire the finest edge.

Typically, the surface of the grinding disc is made of a stone plate with diamond chips applied to the surface.

Despite its apparent simplicity, sharpening knives with this device requires some skill. Otherwise, you can completely damage the instrument and even get injured.

The advantage of a sharpening machine is its versatility. The device can process not only kitchen knives, but also garden or construction tools.

Automatic sharpener

An automatic sharpener has the same operating principle as a machine, but is much more compact in size and is intended exclusively for knives and scissors.

Externally, the device resembles a metal bar with holes of different sizes, for all types of knives. An abrasive disc is installed inside the sharpener, which rotates under the influence of electricity.

This gadget is much safer to use and is suitable for processing ceramic knives.

Manual knife sharpeners

The most affordable and easy-to-use option is manual foot sharpeners. Using this device does not require special skills or additional effort.

Musat

Musat is a metal rod with a barely noticeable scar, and equipped with a handle. The device does not require any special skill and is quite easy to use. In addition, the sharpener is quite light and compact.

Sharpening knives with such a device occurs as follows: the kitchen appliance is placed at an angle of 30 degrees across the metal plate and sharpened on both sides. Please note that the translational movements of the tip must be performed in one direction.

Otherwise, if you move the knife back and forth along the shaft, the blade will quickly become unusable, forming irreparable nicks.

Treating the device with musat is a quick process, but the “sharpness” effect does not last long. This tool is ideal only for maintaining the knife in “working” condition.

Sharpening stone

A sharpening stone is the oldest method of sharpening not only knives, but also scythes, sickles and other tools. For maximum efficiency, this device was soaked in water a day before processing the instrument. The simple device is a stone coated with diamond or silicon of varying degrees of grain size.

The pre-wetted knife must be applied at an angle of 20 degrees and sharpened on each side 7-8 times. Proper processing of blades requires a certain amount of skill and skill. Please note that a sharpening stone is a rather traumatic tool.

The lack of a handle and protective frame is definitely a disadvantage, but the effectiveness of this device is no worse than that of more “complex” sharpeners.

How to choose a sharpener for kitchen knives?

Having considered the types of kitchen sharpeners, we draw your attention to the types of abrasive coating. When choosing a tool for blades, this is the most important point. The “wrong” coating can not only leave the knife unsharpened, but also damage the cutlery.

Coarse abrasive

Coarse-grained spraying on a sharpener is used to restore “damaged” knives. Often, strong mechanical stress negatively affects the texture of the blade, creating jagged edges.

For example, when opening a can with a knife or cutting bones when cooking. In this case, a coarse abrasive grinds down all the irregularities.

Unfortunately, this coating is not suitable for systematic sharpening of the device - it quickly grinds down the metal and changes the topography of the blade.

Medium grain abrasive

The sharpener coating with medium-grained abrasive is the most versatile. With this device you can not only effectively sharpen a tool, but also smooth out small irregularities by slightly increasing the sharpening time.

Medium-caliber diamond chips do not leave deep scratches and do not spoil the aesthetic appearance of products.

This type of spraying is ideal for sharpening blades no larger than 0.5 millimeters, since the edges of the tip of wider products will not only not be processed, but will also damage the sharpener itself.

Fine abrasive

At home, fine-grained abrasives are practically not used - this type of coating is intended only for grinding and polishing small scratches, or sharpening small manicure tools. Most manufacturers use a fine abrasive as an additional attachment to the whetstone.

How to sharpen knives with a knife sharpener?

To learn how to properly sharpen instruments with a knife, you need to know the degree of “unsuitability” of the instrument. If the knife is slightly dull, you can go over the surface of the tip several times with a medium-abrasive stone. Please note that the blade should be at the sharpest angle possible to the surface of the sharpener. Otherwise, you can damage the knife by dulling the main edge of the metal.

Severely dull instruments require more careful restoration. As a rule, in most cases the edge of the tip is no longer visible and you have to sharpen everything again. First, you need to walk along the edge of the knife with a coarse abrasive, setting the desired shape. Then we grind with medium or fine sharpening.

scissors for kitchen knives

Knifes are today as much in demand as the cutlery itself. The cost and quality of steel used in knives has increased markedly, therefore, the requirements for tools for processing have increased. We present to you a rating of the most effective and high-quality knife sharpeners.

Sharpener "Swifty Sharp"

Manufacturers of the electric knife sharpener “Swifty Sharp” (Sweet Shape) rely on consumer demand among housewives.

The compact device not only has a bright design, but also detailed instructions for use that anyone can understand.

This model has 5 holes for different blade widths, as well as a “bonus” attachment for scissors. The price for the Sweet Shape foot sharpener is quite affordable - from 800 rubles.

How to use a knife sharpener correctly

How to use the Apollo knife sharpener

It is simply impossible to describe all the nuances of how to properly sharpen knives in one article, but this is not always necessary. Especially if an ordinary kitchen knife needs sharpening or you are just a beginner who needs to start somewhere.

  • In fact, sharpening a kitchen knife to a sharp point at home can be done easily and quickly. But the difficulty is that this must be done in such a way that the sharpness of the blade is preserved for a long time, and at the same time too much steel is not removed from the blade.

In this material we will try to simply and clearly tell you how to properly sharpen a knife with a whetstone. After all, this method is not only basic and accessible to everyone, but also the most effective. In addition to step-by-step instructions for sharpening and finishing, here you will find a selection of training videos and an overview of alternative methods - from sharpening systems to the bottom of a ceramic plate.

A little about choosing stones

Sharpening stones come in the following types:

  • Ceramic;
  • Diamond;
  • Natural;
  • Japanese water stones.

If you wish, once you gain experience, you can buy some solid and expensive diamond stones or Japanese water stones. However, it is better to start with ordinary ceramic bars (such as “Boats”), which are sold in every household goods store. They are wear-resistant, durable and affordable. The only drawback is their uneven abrasion.

Here are tips to help you find the right assistant:

  • What size should the block be? Ideally, it is 1.5-2 times longer or at least not shorter than the knife blade. The width and shape of the bar is not important.
  • When purchasing a block, make sure it is flat and free of chips.
  • To start, you can buy one medium-hard all-purpose whetstone. But if you wish, buy one block with two sides of different grain sizes or two stones with a large and half the grain size. In the future, a couple more stones may be added to your collection.
  • It's best to try to get a couple of Soviet-made donkeys, say, at flea markets or from your grandfather. Bars marked “Made in the USSR” have uniform-sized grains and high-quality binding material.

To bring your knife to razor sharpness, in addition to sharpening stones, you can also buy GOI abrasive paste, which we will also talk about working with.

7-step instructions for sharpening and finishing a kitchen knife

So, in sharpening a knife, one goal is to remove enough metal from the blade so that the cutting edge becomes sharp again. You need to start work with a coarse-grained abrasive and finish with a fine-grained one.

It is important to remember the following principles of sharpening knives:

  • The most important thing is to choose the optimal sharpening angle and maintain it along the entire cutting edge while sliding along the block.
  • Movements should be smooth, without pressure.
  • All bars must be moistened with water, or better yet, with a soap solution: before sharpening (so that the blade glides better and metal dust does not clog the pores), during the process (to remove the resulting suspension) and at the end, to clean the bar.
THIS IS INTERESTING:  How to make a magnetic mass

And one more important tip - the first time it’s better to practice on a knife that you don’t mind ruining. Especially if your main knife is too good and expensive. Well, let's start practicing.

Step 1. Rinse the stone with water, and then run over it, say, with a sponge with a drop of dishwashing liquid.

Step 2. Next, sit down at the table and place the stone on a wooden board, for example, a cutting board. You can place a towel under the stone. For some it is more convenient to place the block perpendicular to themselves, and for others at an angle of approximately 45 degrees. Over time, you will understand how it is more convenient for you to work.

Step 3. Now you need to decide on the sharpening angle and fix the position of the knife. What should the angle be? The general principle is that the smaller it is, the sharper the blade, and the larger it is, the longer the blade retains its sharpness.

  • Regular kitchen knives are sharpened to an angle of 40-45 degrees. If you are sharpening a fillet knife (designed for cutting thin pieces of fish, poultry and meat), then you should sharpen it sharper - at an angle of 30-40 degrees. The selected value must be divided by 2, and then we will get the angle that should be between the blade and the surface of the block. That is, to sharpen a blade at 45 degrees, you need to sharpen each side at 22.5 degrees to the sharpening surface.

A simple technique shown in the photo below will help you fix the knife at an angle of 22.5 degrees.

  • Remember, you should try to stick to the chosen angle throughout the entire work.

Step 4. Place the knife across the block so that the upper edge of the handle is above the lower edge of the stone. Holding the handle with one hand and the blade with the other, we begin to slide along the block away from ourselves along the trajectory shown in the picture below.

Watch a short and clear video:

  • The point is that the cutting edge sliding along the stone should always be perpendicular to the direction of movement.
  • At the bend of the blade, the knife handle needs to be slightly raised to maintain the selected angle.
  • Remember also that you can’t put pressure on the blade, but you shouldn’t give it any slack either.

Electric knife sharpener how to use

A kitchen knife is an attribute that needs careful handling and proper care. Failure to follow these rules will certainly affect the quality of the prepared food and the time this process will take.

Samura, Fissler, Wusthof or Zwilling JA Henkels - no matter what brand of kitchen knife you get, after the period of use that the manufacturer has assigned to it, it will become dull and require sharpening.

After reading this article to the end, you will find out what you use to sharpen knives at home, and by comparing the pros and cons of each method, you will choose the one that suits you.

Water stone for sharpening knives

A water stone is a knife sharpening device invented by the Japanese (although European models are also available on the market). You can use it by first immersing it in water for a while (by filling the pores of the stone, the water subsequently acts as a lubricant along which the blade slides when sharpening).

There are synthetic and natural stones. Due to the fact that the natural supply of the latter is limited, it was decided to create artificial substitutes that would be in no way inferior to natural ones in terms of abrasive characteristics.

But the type of origin is far from the main characteristic of water stone as a sharpening agent. Grain size is an indicator that determines the properties and functionality of the tool. Please use this as a guide when purchasing.

A coarse stone (#80 - #1200) is intended for rough sharpening; it is used to restore a damaged cutting edge and nicks on a knife blade.

Use a stone with a medium-grained surface (#2000 - #4000) to sharpen dull knives, leveling the sharpening angle if necessary.

Fine-grained water stones (#5000 - #10000) are needed for finishing the blade and maintaining the sharpness of sharpened knives.

Stone sharpening devices are counterfeited by unscrupulous manufacturers, as a result of which the tool crumbles and becomes unusable. Therefore, when choosing a water stone, make a careful choice. Study information about the manufacturer, ask the seller to show the quality certificate for the product.

pros

• Sharpening water stones are suitable for knives made of metal alloys, including titanium, damask steel, stainless steel and Damascus steel.

• The set with the tool sometimes includes a stand, handle and sharpening angle holders.

• Using a combined double-sided stone, you can simultaneously straighten and sharpen knife blades.

• When used correctly, the service life of the device is unlimited.

• Water stone is compact and does not take up much space.

• The considered device is universal. They sharpen kitchen, travel, pocket, hunting knives and thin razor blades.

• Manufacturers have provided pocket versions of this sharpening tool.

Minuses

• The need to first soak the sharpening device in water (in the case of a fine-grained surface, the immersion time is at least half an hour).

• To sharpen knives with this type of device, it is important to know how to use it, otherwise you risk damaging the cutting edge of the blade without achieving the desired sharpness.

• When the grain surface of a tool wears at an uneven angle, it needs to be straightened.

Must for sharpening knives

When a kitchen knife becomes dull, the geometry of the cutting edge of the blade is disrupted. Musat is a device that gives the knife its former sharpness by leveling the sharpening angle and recreating the correct appearance of the blade. The cross-section of the elongated thin part of the musat is oval or round, which is why it looks similar to a file.

The material used to make this sharpening tool is durable steel alloy, zirconium ceramics or synthetic diamonds. Each of the listed options is equally good in business.

The plastic handle of the musat must be securely attached to the working part and fit naturally in the hand, otherwise you should not buy the product.

pros

• Musat is easy to use and does not require preliminary preparation before working with it.

• The tool cannot be damaged, it is durable and will last for many years.

• Since the working part of the grinder is magnetized, the metal chips that remain after sharpening stick to it.

• This sharpening device can be stored together with other kitchen utensils by hanging it by the ring located at the end of the handle.

Minuses

• The tool is only suitable for sharpening medium-hard blades (knife blade hardness index: 50-60 HRC).

• Musats are intended exclusively for straightening the bends of the cutting edge and the final, final stage of sharpening the knife.

Mechanical knife sharpener

Mechanical knife sharpeners are a device with a handle, in the working part of which two sharpening stones or a pair of carbide plates, sometimes ceramic, are fixed at an angle opposite each other.

The design of a mechanical sharpener provides two recesses: one for preliminary sharpening of the knife blade, the other for grinding and finishing.

To use this tool, you need to firmly grasp the handle, and immersing the knife blade in the recess for sharpening, with a sharp movement, move it the required number of times in the direction “base - tip of the blade.” Step-by-step sharpening of knives on a mechanical sharpener returns the blade to its original sharpness and smooth surface.

In the case of a sharpener, in which the knife is fixed in a clamp, the sharpening process occurs exactly the opposite.

pros

• The price of a mechanical sharpener is lower than other types of tools for sharpening kitchen knives.

• This sharpener is easy to use - no skills or special training is required.

Minuses

• The tool is only suitable for sharpening knives at one angle.

• A mechanical sharpener does not correct damaged blades, bends or other mechanical damage to them.

• The surface of the sharpening elements is small, so the service life of this tool is several times less than that of others.

Electric knife sharpener

An electric knife sharpener is a modern device for sharpening dull kitchen knives and maintaining the sharpness of already sharpened ones.

The principle of operation of electric sharpeners is the same - the electric motor, after connecting the tool to a 220 V network and starting the mechanism, rotates the sharpening discs located in the body.

A knife blade passed through them is sharpened in one to two minutes. In this case, there is no need to apply any effort, as is the case with other devices for sharpening knives.

Improved models of electric sharpeners automatically select the required sharpening angle. They are equipped with additional slots for grinding the blade and sharpening knives by hand.

Professional electric sharpeners are capable of sharpening steel knives, zirconium ceramic blades and knives with a wavy cutting edge.

Particularly worth highlighting are the electric sharpeners from the American company Chef's Choice. We described their advantages in detail in a separate article.

pros

• Using an electric sharpener, the sharpness of knives can be achieved without straining or zeal.

• The electric sharpener is suitable for utility knives, chef knives, vegetable knives and other knives, and even kitchen hatchets. The size of the blade is not important.

THIS IS INTERESTING:  How to make a profile bending machine with your own hands

• With an electric sharpener, polishing blades and sharpening the cutting edge is more effective than with a manual one.

Electric sharpeners are compact and sometimes much more attractive in appearance than other sharpening tools.

• The lifespan of the device is not limited, since it is equipped with replaceable sharpening elements, which are further extended by diamond coating.

Sharpening devices for knives with angle degree adjustment: principles of operation of sharpeners and their varieties - SibNovStroy

The story of self-sharpening knives made of a wonderful supermaterial has naturally sunk into oblivion.

It couldn’t be any other way - the nature of friction, the laws of solid state physics, the fundamentals of materials science and metallurgy have not yet been canceled.

Even space titanium and ceramic knives become dull after some time and require sharpening. Well, steel and Damascus blades require, if not daily, then monthly editing.

Stages

The process of sharpening knives consists of several stages and does not always require full compliance with the entire cycle. With proper care of knives and respect for them, it will be enough to perform only the so-called editing. There are 4 stages or methods of sharpening cutting surfaces:

  1. Sharpening - restoration of the cutting edge of the blade. It is carried out using materials with high and medium degrees of abrasiveness.
  2. Finishing is grinding the edge with abrasive materials with “fine grain”.
  3. Editing - final polishing of bevels and cutting edges with a ceramic pencil, GOI paste or on a leather belt.
  4. Resharpening or deep sharpening - complete restoration of the desired sharpening angle, blade profile geometry and elimination of rough edge chips. It is carried out using special devices.

Materials

  • Artificial abrasives are diamond powders of different fractions; grains of different sizes from electrocorundum or silicon carbide. The quality of whetstones or cutters coated with these abrasives is greatly influenced by the material used to bind the fractions. Used at the stages of regrinding, sharpening and rough finishing. Not recommended for constant regular finishing.
  • Ceramics is a modern type of materials for hand whetstones, grinding stones and mechanical sharpening cutters: 1) corundum or aluminum oxide - intended for finishing knives made of all types of steel; 2) zirconium dioxide is a complex, expensive to produce coating for knives and sharpeners for fine straightening and finishing.
  • Japanese Waterstone water stones are mostly artificially ceramic, but natural ones are also rare. Before sharpening, the stones are soaked in cold water for 15 minutes, sometimes with a small addition of soap solution, and dried after use. Used at all stages of sharpening depending on the size of the fraction. Stones require constant leveling of the plane of their surface.
  • Novaculites - “Arkansas”, “Turkish”, “Belgian” stones; Vashita. These are natural slates and chalcedony interspersed with quartz and garnet grains. Artificial substitutes can also be found on sale. They only work in combination with a special oil lubricant. Due to the natural diversity of grain sizes and different degrees of hardness of the rocks, they are suitable for all stages of knife sharpening.

Methods

To sharpen cutting tools at almost all stages of work (except for regrinding), you can use two sharpening methods: using special mechanical devices and manually.

For manual sharpening, straightening and finishing of blades , bars, discs, musat, pencils and pastes . To facilitate this process, you can purchase or make special stands, fasteners and clamps yourself.

For deep sharpening, professional sharpening machines are required. But on the modern market of sharpening devices there are mechanical sharpeners with a wide range of effects and household use.

Sharpening angles

In the process of sharpening knives, it is important to constantly adhere to the correct inclination of the blade to the block (mill) and thereby maintain the original factory angle of the cutting edge.

Sharpening mechanisms with adjustable sharpening angle

The profession of a sharpener and sharpening knives has always been a male priority. Modern sharpening devices allow women, without the participation of men, to keep knives in “full combat readiness.”

The usual cheap corundum broaching blades cannot always help, since the sharpening discs are set at a standard angle - usually 20 degrees, and the corundum can roughly cut the cutting edge. An exception may be simple ceramic broaching sharpeners, but they are also of little functionality due to the strictly set degree of sharpening.

From the presented table it can be seen that not all tools are sharpened at an angle of 20 degrees. You can, of course, try to find hand knives “each with its own degree of drawing.” However, here the consumer is faced with a catch not even in the total cost of such purchases, but in the “cluttering” of the kitchen space and the high probability of ruining the knives by sharpening them on the knife at the wrong angle.

You can sharpen tools at the desired angle manually using a primitive homemade device from a stationery binder , adjusting the angle by the grip depth.

For consumer convenience, modern manufacturers began to produce devices and machines with variable adjustment of the degree of sharpening of the following varieties:

Mechanical sharpeners

  • Mechanical, broaching sharpener with adjustable angle and two abrasive surfaces for sharpening (1) and finishing (2).
  • Mechanical sharpener with zirconium discs for Asian and serrated knives.
  • A mechanical sharpener with fixed bars for finishing or sharpening at different but fixed angles .
  • A device with arbitrarily adjustable angles for fixing sharpening stones.
  • A device with a knife fixation and a sliding sharpening surface at an arbitrarily set angle.

In conclusion, let us remind you that any mechanical devices facilitate, but do not replace, manual labor in sharpening knives.

My daughter was really looking forward to this sharpener, as she loves penguins and collects them. When ordering, it was impossible to choose a color, so it was a surprise for us - they brought us a pink sharpener, as they knew that for a girl, I couldn’t describe the delight.

The sharpener itself is of very high quality, with two holes of the same diameter for pencils, one longer, the other shorter, sharpens quite well, a spacious compartment for cleaning - enough for all 12 pencils, easy to remove and put back on.

In general, the child is happy - he now sharpens his pencils himself. Thanks Mytoys

I needed a sharpener for thick cosmetic pencils, but alas, the hole is too small, suitable for regular ones and a little thicker than regular ones

We love the Rondell brand, we have already purchased a set of pots and pans from this brand. When we saw knives of this brand in your store, we immediately bought several pieces. The paring knife is good, it is convenient to use, it is made of stainless steel. Cleans and cuts just fine. It holds tightly in the hand and does not slip out. Now I peel vegetables quickly and deftly, cooking takes less time than before with the old knife.
